Eggless Spinach and Mozzarella Muffins ..

Muffins are always loved by all age groups. Definitely kids liked it more..
  Generally we are habituated to eat sweet muffins..
 But this time i tried spinach and Mozzarella savory Muffins ..Me and my little one was too curious to see the final product and believe me this savory Muffins was too yummy , tasty and healthy too..
   I have here used Mozzarella cheese but You can use any cheese of your choice..



Cook Time -- 30 -35 mintues
Serve - 5

Ingredients  -----

Refine flour - 1 cup

Blunch and chopped spinach - 1/2 cup

Mozzarella- 1/3 cup

Buttermilk or curd - 1/2 cup

Baking powder - 1 tsp

Baking soda - 1/4 tsp

Melted butter - 1/4 cup

Crushed / chopped Garlic - 1 tsp

Salt - 1 tsp ir as required

Black pepper  - 1 tsp




Step by step Method -----
---------------------------------

Preheat your oven on 200c for 10 minutes..

Take a bowl ,add melted butter and crushed garlic ..

Now add buttermilk or curd, salt to taste and black pepper..
  Whisk well till smooth..


Then add sifted flour ,baking powder and baking soda..
    Mix well with wet ingredients with spatula ..

Then add chopped spinach and Mozzarella cheese..Mix well with batter..



Now arrange all muffins molds with muffin paper.

Pour batter into all muffins mold 3/4 th....spread some cheese on top..

Now keep all muffins mold into the preheated oven..

Bake spinach and Mozzarella Muffins on 180 c  for 30-35 mintues..
    After 30 minutes insert a toothpick inside the muffins ,if it comes out clean means its done..if not then bake it for few more mints..


Eggless Orange Cake With Choco orange glaze

Frangnant , moist ,tender orange cake made with freshly squeezed orange juice and orange zest..
Here i have made eggless orange cake with fresh orange juice but you can even use readymade orange juice. 
Eggless Orange Cake is soo easy ,simple ,no fuss and easy to make recipe...you can also made eggless orange muffins with this batter too..

Cook Time :--- 45 - 50 minutes
Serve - 6

Ingredients:

Refine flour  - 1 cup

Baking powder- 1 tsp

Baking soda - 1/4 tsp

Fresh orange juice  - 3/4 cup

Soft butter -  1/3 cup

Powder sugar - 3/4 cup

Ingredients for choco orange glaze --- 
Powder sugar- 1 cup

Coco powder - 3 tbsp

Butter - 1 tbsp

Orange juice- 2-3 tbsp


Method  :---

Take a bowl add soft butter and powder sugar. Whish till fluffy..

Then add orange juice and mix well with butter and sugar mixture till incorporate ..

Now add dry ingredients flour , baking powder and baking soda (pass through the sieve) with wet ingredients..

Now mix well dry and wet ingredients with spatula to make semi thick batter..

Now add orange zest and mix well with cake batter..

Grease a round cake tin with little oil or butter and dust with flour..

Pour cake batter into the cake tin..tap twice..

Bake cake in preheated oven on 180 c for 35 - 40 minutes..

After 35 minutes insert a toothpick or knife into the cake ,if it comes out clean,means cake is done .if not then bake cake for few more mints..

Do not touch cake tin till its little cool.

For choco orange glaze ---  take a bowl add powder sugar,coco powder , butter and orange juice..and mix well everything till smooth.
Pour this glaze over the orange cake..let it set for 5 minutes..

Shahi Reshmi Murg

Shahi Reshmi Murg or chicken in creamy milky white gravy .It is a mildly taste  yet flavourful gravy..This chicken made with  cashew,magaz,Poppy seeds ,  milk and cream which makes it creamy and delectable.

 Ingredients : ----

Chicken  - 700 gms

Onion - 1 , thinly sliced

Ginger + garlic paste - 1 tbsp

Milk - 1 cup

Milk powder- 3-4  tbsp

Coriander powder- 1 tsp

Black pepper  -1 tsp

Shahi garam masala- 1 tsp

Fresh cream - 3-4 tbsp

Ghee - 1 tbsp

Cashew nuts - 1 tbsp

Magaz - 1 tbsp

Kewra water  - 1 tsp

Rose water - 2 tsp

Salt as required

Ingredients for shahi Garam Masala:---

Mace / javitri - 1/4 tsp

Nutmeg / jaifal - 1/3 tsp

Shahjeera / black cumin- 1/2 tsp

Black cardamom- 1

Green cardamom- 3-4

Cloves - 4-5

Cinnamon- 1/2 inch stick

Black pepper- 1/2 tsp

Star anise - 1/4 tsp

Dry roast everything till fragrant then make powder..keep it in a air tight container.



Method  :--

Wash chicken properly..

Soak cashew nuts,magaz and poppy seeds in warm Water for 20 mins. Then put in blender and blende till smooth.

Dry roast all whole spices under shahi garam masala and grinde to a powder.

Take 1 cup milk. Make it warm then add milk powder and stir well to dissolve milk powder...keep aside.

Now heat a kadai with 1 and 1/2 tbsp ghee and 1tbsp oil.

Then add bay leaf , 1/2 stick cinnamon, 2 green cardamom, 3 Cloves.

Once you get a nice aroma,add sliced onion .fry till translucent .

Then add ginger garlic paste and stir it for a minute..

Now Add chicken,Salt to taste 1/2Tsp black pepper , coriander powder and cashew magaz poppy seeds paste..sprinkle some water..stir it for 3-4 mins or till oil leaves.

Then add a cup of milk and milk powder mixture ....give a nice stir..once the gravy starts to bubbling. Turn down flame and simmering it for 20 - 25 mins or till chicken cooked well.

When chicken become tender, add shahi garam masala , cream,rose water , kewra water and kasuri methi .give nice stir to mix well

Check seasoning..keep gravy as per your desire consistency..

Serve shahi Malai murg with Roti/paratha / naan etc.

Palak Chicken | saagwala Murg | Spinach Chicken

Palak chicken | Saagwala Murg | chicken with spinach is delicious yet healthy dish in Indian cuisine..Spinach is full of Iron and fibre as well as chicken is also good source of protein..Here chicken cooked with spinach to make the more delicious and nutrious..

Ingredients :--

Chicken - 600 gms

Spinach | Palak - 1 bunch

Curd - 3 tbsp

Onion - 1 chopped

Ginger + Green chili paste - 1 tsp

Garclic paste - 2 tsp

Salt as required

Sugar - 1/2 tsp

Turmeric powder- 1/2 tsp

Chili powder- 1 /2 tsp

Cumin powder- 1/2 tsp

Coriander powder- 1 tsp

Bay leaves- 2

Cinnamon- 1/2 inch stick

Cardamom- 2-3

Cloves - 2-3

Garam masala- 1 tsp

Kasuri methi - 1 tsp

Fresh cream - 2-3  tbsp

Method  :----

Washed spinach properly to make sure there has no dirt..

Then chopped spinach roughly and then blunch it for 3-4 mintues.. Then drain water .let it little cool..

Now put blunch spinach in a blender to make spinach puree..keep aside

Heat a pan with 3 tbsp oil .add bay leaves , cinnamon,cloves and cardamom..

Once you get a nice aroma of whole spices then add chopped onion..saute it till light brown..

Now add ginger garlic and green chili paste..stir it for 1mintue..

Now add chicken ..stirring it for 2-3 mins on high flame.

Meanwhile take a bowl add curd and all dry spices(except gararam masala) along with salt as required and sugar..mix well everything..

Add this curd mixture into the chicken..give a nice stir to mix well everything..

Stirring it for few minutes until oil leaves side of the pan.

Then add 1/2 cup water..bring to bubble then turn down flame ,cover pan and cook till chicken done well..

After chicken get tender add spinach pure e..mix well to the chicken..

Now cook spinach chicken uncovered for 5-6 mins.

Then add garam masala, kasuri methi and cream ..give a nice stir to mix well..

Check seasoning...keep gravy as per your desire consistency..

Ready delicious and healthy palak chicken ..server it with roti ,naan ,paratha or Rice..

NOTE:--- IF U WANT TO RETAIN THE GREEN COLOUR OF SPINACH INTACT.DO NOT COVER KADAI AFTER ADDING SPINACH IN KADAI.

Beetroot Pasta with creamy white sauce


     Beeroot is a excellent source of Iron , calcium,folic acid and fiber..Generally maximum people didn't like to have beetroot and  Dealing with kids for healthy food actually a tough job.All kids are love pasta ,so thistime i choose homemade beetroot pasta with creamy sauce.. this nutritious vegetables is must eat vegetable.
      Here I made Beetroot Pasta It is a tasty and attractive plate of pasta in healthy way.

Ingredients:----

For Eggless dough
-----------------------------

Refine flour  - 1 cup

Salt as required

Oil - 1 tsp

Beetroot paste -3 tbsp

For creamy white sauce
---------------------------------------
Butter - 3 tbsp

Flour - 3 tbsp

Garlic chopped or crushed  - 2 tsp

Milk - 1 cup or as required

Salt as required

Pepper  - 1 tsp

Italian seasoning  - 1 tsp or oregano  - 1 tsp and chili flacks- 1 tsp

Cream - 4-5 tbsp

Parmesan cheese  - 2-3 tbsp


Method:----

Making Beetroot Pasta
-------------------------------------

Heat sauce pan with a cup of water .add washed roughly chopped beetroot.

Boil it till beetroot cooked well. Drain water..cool it ..then put beetroot in blender and blend till smooth.

Take a bowl ,add all purpose flour ,salt .combine well ,add beetroot pasta ,mix it well.now add water little by little , knead a stiff dough..

Place dough in a floured surface .knead dough for minimum 5-6 minitues or till dough smooth and silky.

Cover it with clingfilm for 15-20 minitues.Place dough in a floured surface .knead dough for minimum 5-6 minitues or till dough smooth and silky.

Then take medium portion from dough..roll it like a big paper thin roti..cut it lengthwise.

Heat a saucepan with enough water .add salt and 1tsp oil. When water starts boling add pasta, note fresh pasta takes minimum time to cook.keep your eye on there only.my one took only 2-3mints..

Drain water ..keep pasta in strainer.

Making Creamy white sauce---

Now heat a pan .add 2tbsp butter ,add garlic , now add flour .stirring constantly till raw smell of flour disappears.

Now add milk gradually and whisk mixture constantly till thiken.

Then add cream .mix well.season with salt ,paper and Italian seasoning (mix herbs).add parmesan cheese.mix well..

Add pasta and mix well with creamy sauce.. you can add milk or water as per your desirable sauce thickness..

Serve hot..

Banana Stem Curry | Thor Ghanto | Bengali style Banana stem curry

Banana Stem is a rich in Iron..There are various important nutrients present in the banana stem..As banana stem juice is low in calories, and full of Iron...If you have iron deficiency  ,take plenty of banana stem juice and within a week you will notice your haemoglobin is increasing but without consuming excess calories.
    Banana stem is a vegetable with many health benefits not only rich Iron as well as It's really high in fiber and rich with potassium and vitamin B6. It is good for high blood pressure, kidney stones or even for weight loss program and many others.
    We are the Bengali s called Banana steam in our typical bengali term "Thor". And "Thor ghanto" or Banana Stem Curry is a traditional,very common yet delicious preparation in Bengali any Bengali household.its pure vegetarian preparation with minimum ingredients still its very tasty. You can enjoy Banana Stem Curry with steam rice or roti or whatever you like..  


Ingredients:----

Banana Stem | Thor --- 2 cups , chopped

Potato - 1 ,  chopped

Onion seeds or kalonji - 1 /3 tsp

Dry red chilli  - 2 
Turmeric powder- 1 tsp 

Chili powder - 1/2 tsp 

Salt as required 

Sugar -- 1 tsp

Coconut paste - 4 - 5 tbsp

Ghee or clarified butter- 1 -2  tsp

Method :----

Chopped Banana Stem and then wash properly. 


Then pressure cook banana stem with little salt and turmeric .wait for 4 whistle..then turn off gas..allow to release pressure.. take out from cooker and put it in a bowl..

Heat a pan with 2 tbsp of oil .add onion seeds and dry red chilli..once you get nice aroma add chopped potatoes and cook till soft on low flame..

Then add boiled banana stem.add little chili powder .mix well with potatoes..
   Then add salt if required and 1 tsp of sugar and mix well everything..
Then add coconut paste and give a good mix..

Stir continuously for 5 - 6 minutes or till the curry dried up completely..Then add ghee and mix well ..check seasoning if required adjust..


Now delicious Banana stem curry is ready to serve...serve it with steam rice or roti ..
