Eggless caramel Banana Pudding

Delicious yet healthy egg-less banana pudding made with easily available homely ingredients. It is served as dessert.




Cook Time-  20 mins
Serve - 2

Ingredients:---

Ripe banana- 2
Milk - 1 cup
Condensed milk - 1/2 cup
Sugar  - 4-5 tbsp or as per your sweet tooth
Vanilla essence- 1/2 tsp
Cornflour- 2tbsp

Method  :----

Take a blender. Put everything and blend till smooth.

Heat a pan with 3tbsp sugar .wait till sugar caramelized

Pour caramel immediately into the pudding bowl.

Now pour pudding mixture into the pudding bowl

Heat a pressure cooker with 1/2 cup of water.

Place a aluminium rack inside cooker. Now put pudding bowl Inside the cooker.

Close the lid. Remove the whistle and reduced flame to low for 20 mins

Caramel Banana Pudding is ready. Wait for 6-7 mins for the cooker to cool down.

For microwave:
Pour 1/2 cup water into a flat bowl then place the pudding bowl in it.

Microwave it on full power for 8-10 mins.
Check pudding in between.

Ready eggless caramel Banana Pudding.

Take a serving plate and flip the pudding bowl over and serve hot or chilled.

Kalo jaam | kala jamun

Kalo jam is one of the loved sweet in bengal..generally kalo jam made with khoya and chena but i have tired to make it with milk powder which is easy to make and taste will remain the same.

Cook Time- 45 mins
Serve - 5

Ingredients :--

Milk powder- 1 1/2 cup
Maida - 3 tbsp
Arraroot- 2tbsp
Baking soda - 1/4 tsp
Milk - as required for kneading

For sugar syrup:-

Sugar - 2 cup
Water - 11/2 water
Cardamom- 3-4

Method:---

Take a bowl. Add milk powder,Maida  arraroot and baking powder. Combine everything.

Now add milk gradually and make soft -smooth daugh..cover it with damp cloth for 15-20 mins .

Now heat a heavy bottom pan .add water and sugar.stirring till sugar dissolved and make one thread sugar syrup .add cardamom mix well with syrup..

Now make 20 equal portion smooth  ball from the milk powder daugh. Ball shouldn't be any cracks.

Now heat a pan with enough oil for deep frying..

Slowly add milk powder balls Into the medium hot oil..

Fry properly till turns blackish golden colour.

Take out from pan .place it on a paper towel..

Then add kala jamun Into the warm sugar syrup..keep it in the syrup for 2-3 hrs.
Or till the kala jamun soak the syrup and become soft..

Dudhpuli

Dudhpuli is one of the famous and delicious pithe from west Bengal during Makarsankranti / Poushsankranti.This coconut -kheer/mawas /data palm jaggery stuffed dumplings boiled in thick milkand milk flavoured with date palm jaggery.

Ingredients -----

For stuffing

Fresh grated coconut - 1cup
Unsweeten kheer /mawa - 70 cms
Sugar - 5tbsp / adjust as per your sweettooth
Milk - 2/4 cup
Green cardamom powder - 1tsp

For shell

Refine flour - 1cup
Semolina / suji - 4tbsp
Salt - 1/2 tsp
Water for kneading

For dudh / Milk kheer

Milk - 1 ltr
Sugar - 5-6tp / adjust as per your sweettooth
Unsweeten Mawa - 4tbsp
Green cardamom powder - 1 tsp






Method
Stuffing --- heat a kadai.. Add mawa and milk .stir continuously till mawa completely melt..now add grated coconut ,sugar...stirring constantly until coconut mixture starts to separate from the kadai and oil of coconut and mawa leaves the side of the PAN..then add cardamom powder.mix well..turn off gas..keep aside..let it cool

Shell --- take a bowl add refine flour ,suji/ semolina,salt ..combine all..now add water little by little and knead soft smooth daugh..cover it for 15-20 minutes..

Meanwhile heat a saucepan .add 1litr milk..stir occasionally.

Now take small portion from daugh..make a little ball.place it on your plam.pree little.it will be look like a circular disc.add 1tsp coconut mixture centre of the disc...press two opposite site wings and seal the edges by pinching with fingers.ready puli..when you will make one puli /dumpling keep covered others..

When milk starts boiling add mawa.stir constantly till mawa dissolves..then add raw puli into the boiling milk ..then reduce flame on low- meduim fire till 10-15 minutes..when you will see puli s are looking little bigger in size anda also started to float on top.means Puliampatty are cooked....now add sugar .give a nice stir to dissolve it..add cardamom powder..

Malpoa

Malpoa

We all have little or more sweet tooth....Malpoa is a well known sweet dish in every household in India ...it's a fluffy  soft in inner side and edges are crisp....in West Bengal Malpoa made specially in makar sankranti and any other special occasion..


Maida --6tbsp
Semolina/rawa/suji---3tbsp
Sugar--2-3tbsp
Cardamom powder---1/4tsp
Saunf/aniseed-1/4 tsp
Milk----1/2cup
Water---2/3cup
 
For --sugar syrup
Sugar---1/2cup
Water--1cup


Process

Soak maida,semolina ,sugar ,saunf into milk and water mixture for 20 mins to half an hour...stirring the batter ..make sure no lump should not be formed...minewhile make a sugar syrup .....place water and sugar ..stirring sugar till sugar dissolve complty...simmer gas on low flame for 10-12 mins...syrup consistency  like medium sticky..heat oil in a pan..stir the batter throuhly,take a ladle .pour the one full laddle batter into the oil ,fry it in low medium heat...fry it till the edges get crisp and brown.. drainn Malpoa from the oil and soak it into the sugar syrup immediately ..soak it for 1-2mins...drain malpoa from syrup and place it on serving plate....
